Artichokes are one of my favorite vegetables. Here is my process for preparing them.
Cut or purchase artichokes.
Prune thorns from artichokes
Remove top of artichoke with sharp chefs knife.
Use back of kitchen spoon to remove the bitter choke. Much scraping will be required. Use finesse to prevent destruction of the artichoke.
Once choke is removed, boil the artichoke for 10 - 16 mins or until desired texture is achieved. Water should be well seasoned.
Remove choke and place upside down on plate or pan. Place artichoke in cooler.
reheat artichoke on grill or in microwave. Serve with clarified butter and mustard(s).
